Granola

I love a good granola, but I like to make it myself to control the sweetness level. I also tend to put in more nuts than what you can buy at the store. I also think it’s cheaper when made at home. This recipe was adapted from Grow, Forage, Cook, Ferment.

INGREDIENTS

3 cups One Degree Oats

½ cup maple syrup or honey

¼ cup coconut oil

½ cup pecans

½ cup walnuts

½ cup sprouted pumpkin seeds

½ cup dried not sweetened cranberries

½ cup non sweetened coconut flakes

1 TBS pumpkin pie spice

½ tsp vanilla

¼ tsp salt

Directions

  1. Preheat the oven: You want the oven on 325 degrees so you don’t burn your granola. Line a baking sheet with parchment paper. I like to use non bleached.

  2. Mix liquids together. Put your liquids into a large measuring cup or bowl and mix together. You will have to heat up the coconut oil first and then add other liquids.

  3. Combine nuts, seeds NOT CRANBERRIES: Measure out the rest of the ingredients, all the solids, into a bowl. Cranberries go in after it’s cooked.

  4. Assemble: Pour your liquids over your solids and mix well. It’s best if you do this by hand.

  5. Spread on your baking sheet: Now spread this mixture on the baking sheet as evenly as you can.

  6. Cook: 15-20 minutes and then stop and stir everything around. Stick back in the oven for another 15-20 minutes before taking out for good. Add cranberries.

  7. Cool before putting in glass jar for storage.
