Berry Bake
This recipe is so versatile. I throw in whatever flours we have and whatever fruit we have left in the kitchen. It’s a great way to sneak in lots of fiber and fruit to your kids breakfast meal. Sometimes we eat this with 2 slices of bacon or a sausage patty. Recipe from Farmhouse on Boone.
Ingredients
1 cup One Degree Oats
1 cup flour of choice
¾ cup coconut sugar
½ tsp salt
½ tsp cinnamon powder
¾ cup butter or coconut oil
6 cups berries
¼ cup coconut sugar
2 tsp vanilla
¼ cup flour of choice- we use Pamelas Pancake Flour Blend (Gluten Free)
Directions
Preheat oven to 375 degrees.
In a large bowl, add oats, flour, sugar, salt and cinnamon. Mix well.
Chop butter and add to flour mixture. Mix into the flour with hands until crumbly.
In a second bowl, mix berries with sugar, vanilla, and flour.
Pour berries into 9x13 Pyrex dish or skillet. Carefully place the oat mixture on the top of berries as evenly as possible.
Bake for 35 minutes until the berries are bubbling like crazy and the top looks brownish.
Cool before devouring or you will burn your mouth.
You can also throw in hemp heart seeds, chia seeds or any nut or seed.
