Breakfast Casserole
This one was originally my mother’s. She would make this for every holiday. I have made some changes to it, but it brings a smile to my face when I make this one. I like to think that I am keeping my mom around when I use her recipes.
1 pound local breakfast sausage or make your own with quality ground pork
1 tsp olive oil
½ red bell pepper
½ orange bell pepper
5 oz chopped greens
1 onion diced fine
10 fresh eggs
½ cup whole milk
salt and pepper to taste
16 oz diced hash browns (fresh) or you can shred your own
1 cup cheese of choice, I prefer sharp cheddar
Preheat the oven to 375 degrees. Coat a 9x13 Pyrex dish with butter or oil.
Heat a skillet on medium heat. Cook sausage until fully cooked. Remove to a mixing bowl.
Add the peppers, greens and onion to the grease and cook until soft.
Add greens and stir until wilted. Add all the veggies to the bowl with the sausage and stir. Add the ½ the cheese and all the potatoes.
In a separate bowl, whisk together you eggs, milk, salt and pepper.
Pour the egg mix over the sausage mix and stir to combine. Pour into baking dish. Sprinkle with remaining cheese.
Cover with foil and bake for 30 mins.
Now remove the foil and bake until eggs are set which can take about 20-25 minutes. You also want the potatoes soft.
I like to throw some chopped green onions on top of ours when it cools, before I cut.
