Breakfast Casserole

This one was originally my mother’s. She would make this for every holiday. I have made some changes to it, but it brings a smile to my face when I make this one. I like to think that I am keeping my mom around when I use her recipes.

1 pound local breakfast sausage or make your own with quality ground pork

1 tsp olive oil

½ red bell pepper

½ orange bell pepper

5 oz chopped greens

1 onion diced fine

10 fresh eggs

½ cup whole milk

salt and pepper to taste

16 oz diced hash browns (fresh) or you can shred your own

1 cup cheese of choice, I prefer sharp cheddar

Preheat the oven to 375 degrees. Coat a 9x13 Pyrex dish with butter or oil.

  • Heat a skillet on medium heat. Cook sausage until fully cooked. Remove to a mixing bowl.

  • Add the peppers, greens and onion to the grease and cook until soft.

  • Add greens and stir until wilted. Add all the veggies to the bowl with the sausage and stir. Add the ½ the cheese and all the potatoes.

  • In a separate bowl, whisk together you eggs, milk, salt and pepper.

  • Pour the egg mix over the sausage mix and stir to combine. Pour into baking dish. Sprinkle with remaining cheese.

  • Cover with foil and bake for 30 mins.

  • Now remove the foil and bake until eggs are set which can take about 20-25 minutes. You also want the potatoes soft.

  • I like to throw some chopped green onions on top of ours when it cools, before I cut.

Granola
