Herbal Marshmallows

You can’t have a hot cocoa recipe and not have marshmallows. I love to make these myself because they are so much better tasting. Gelatin is a great ingredient for people whose guts need a little TLC. You can change the flavor by changing the herbs.

1 Cup room temperature tea of choice or water

½ cup gelatin

1 ½ cup maple syrup

Put the tea or water into mixer bowl until room temperature.

  • Add gelatin to the liquid and any spices you might want to throw in there.

  • Let it “bloom” for about 10 minutes.

  • While it is blooming, heat the maple syrup in a sauce pan until it reaches a boil.

  • Mix the hot maple syrup into the bloomed gelatin. Slowly while mixer is on high so it doesn’t fling everywhere. Mix until light and fluffy. It usually takes 5-8 minutes. If you over mix, they will be hard when ready.

  • Scoop/pour into a baking dish that is lined with parchment.

  • Refrigerate until set which takes about 4-6 hours or overnight.
