Aunt Pat’s Chowder

My Aunt Pat was married to my Dad’s brother. She was an early education teacher and I loved when she visited. She had one of those soft laps that you could curl into and stay all day. The story is that she brought this to a family event and then it continued to be a favorite.

2 lbs. sausage browned

6 cups water

2 24 oz cans tomatoes with juice

1 tsp thyme, chopped

1 cup diced bell peppers

2 onions, chopped

5 cloves garlic, minced

1 tsp salt

2 cans kidney or pinto beans

  • Brown your sausage in the instant pot.

  • While browning meat, chopped veggies and herbs.

  • When meat is cooked, dump all the other ingredients into your pot.

  • Put on the lid and pressure cook for 15 minutes.

  • Serve with cheese, sour cream and green onions on top if that is your kinda thing.

  • **some of my relatives add corn into this recipe. My mom always added potatoes because that was one of her favorite things to eat.
