Aunt Pat’s Chowder
My Aunt Pat was married to my Dad’s brother. She was an early education teacher and I loved when she visited. She had one of those soft laps that you could curl into and stay all day. The story is that she brought this to a family event and then it continued to be a favorite.
2 lbs. sausage browned
6 cups water
2 24 oz cans tomatoes with juice
1 tsp thyme, chopped
1 cup diced bell peppers
2 onions, chopped
5 cloves garlic, minced
1 tsp salt
2 cans kidney or pinto beans
Brown your sausage in the instant pot.
While browning meat, chopped veggies and herbs.
When meat is cooked, dump all the other ingredients into your pot.
Put on the lid and pressure cook for 15 minutes.
Serve with cheese, sour cream and green onions on top if that is your kinda thing.
**some of my relatives add corn into this recipe. My mom always added potatoes because that was one of her favorite things to eat.
